Soya Granule Upma Recipe

1 cup Soya (nutrella, etc.) granules
1/2 cup Wheat bran or semolina (rava)
2 Green chillies finely chopped
1 Onions finely chopped
1/2 tsp. Ginger grated
1 stalk Curry leaves
1 tbsp. Coriander finely chopped
3-4 Tomato slices
1/2 tsp. Each cumin & mustard seeds
1/2 tsp. Each channa & udad dals (bengal gram & black gram dals)
1/4 tsp. Turmeric powder
3-4 Pinches asafoetida
1 tbsp. Oil
Salt to taste
2 tsp. Lemon juice

Method:
Roast rava in a heavy pan, stirring continuously, till aroma exudes.
Empty and keep aside.
Roast granules in same pan, stirring continuously, till warm.
Empty and keep aside.
Heat oil in same pan, add dals, stir for few seconds.
Add seeds, allow to splutter.
Add ginger, chillies, curry leaves, chopped onion.
Stir till onion is tender.
Add rava and soya granules. Stir for a minute.
Add all other ingredients, except lemon juice, tomato and coriander.
Add 2 cups boiling water, stir to avoid lumps.
Use a longhandled spoon, to avoid the splashing that may be caused.
Add more water if necessary, to cook the rava and granules.
Add lemon juice and coriander.
Mix well. Cover and cook on low for 2-3 minutes.
Garnish with tomato slices.
Serve piping hot.

Nutritional value for each serving:
Calories : 234.1 kcal
Proteins :  16 gms
Fats : 10.8 gms
Carbohydrates : 21.3 gms
Minerals : 1.74 gms
Fibre : 7.43 gms

My take: I love spicy food, this was a nice change. It may taste a bit bland for those who like spicy food more, however, it is really fulfilling and I enjoyed it a lot.

Vegetarian Kheema ( Minced Soya Curry)

I just tried this recipe and this let me tell you this is one of ‘the yummiest’ thing I have churned up from a messed up kitchen.

Ingredients:
Soya granules 1cup
Tomatoes 2 to 3 meduim size
Onion 1 medium size
Ginger & Garlic paste 1tsp each
Turmeric powder 1tsp
Chilli powder 2 tsp
Salt a/c to taste
Dhaniya or Coriander powder 1 tsp
Garam masala 1/2 tsp (optional)
Fresh cilantro 1/2 cup
Lime juice 1/2 tsp (optional if not adding garam masala)
Oil for cooking

Method:

  1. Wash and soak granules in warm water for 1/2 hr
  2. Menawhile, cut tomatoes into thin slices or make puree and keep aside
  3. Cut onions into thin slices
  4. Take a wide pan, heat oil and add onions and fry till light brown in color
  5. Add ginger-garlic paste and fry for 1 min
  6. Add turmeric powder and fry for few seconds, add soya granules by squeezing all water from it into the pan and mix well.
  7. Fry for 2 minutes. Add all other masalas including salt and mix well (if needed very little water ) and allow to cook with closed lid on medium heat for 5 minutes.
  8. Now add tomatoes and mix well. Again allow to cook for 5 more minutes or untill tomatoes are cooked completely. (Here if you are adding tomato puree, then add it after 5th step.
  9. Finally add cilantro and lime juice and mix well and sim for 2 minutes.
  10. Remove from heat and serve with hot chapathis or plain rice.
